Citrine is the concept of owner Branko Palikuca, who drew on the cuisine of his childhood in Serbia and beyond, and chef Jordan Parker, who traveled to the Mediterranean to explore its food and preparation.
“My culinary philosophy includes respect for all the ingredients,” said chef Parker, “and a true appreciation for all the hard work put forth by everyone from the kitchen to the farm to deliver great-tasting food on a consistent basis.”
Also joining the Citrine team as general manager is Rebekah Graham, a certified sommelier and certified beer server with the Cicerone Organization who was most recently the wine and beer coordinator at the Publican in Chicago.
“Since living in Chicago I have been very proud to work with the restaurateurs and chefs that I consider to be some of the best in the industry,” said Graham. “I am excited to continue to do so at Citrine.”
